BERLUCCHI '61 BRUT Franciacorta GRAPE VARIETY: Chardonnay (90%) and Pinot Noir (10%), coming from the most suitable vineyards of the 19 communes of Franciacorta. HARVESTING TIME: from the second decade of August to the first of September. YIELD: 9,000 kg of grapes per hectare, with a yield in must of 55%, equivalent to 6,600 bottles per hectare. VINIFICATION: soft and progressive pressing of the grapes with fractionation of the must; alcoholic fermentation in steel vats. MATURATION: preparation of the cuvée in the spring following the harvest. Second fermentation in bottle and subsequent ageing in contact with its own yeasts for at least 24 months, followed by another 2 months after disgorging. DOSAGE: Brut. FORMATS: 750 ml bottle, demi 375 ml, magnum 1.5 l, Jeroboam 3 l, Mathusalem 6 l, Balthazar 12 l, Nabuchodonosor 15 l. ORGANOLEPTIC CHARACTERISTICS: VISUAL ASPECT: soft foam, with good persistence of a tenuous crown; thin and continuous perlage. COLOUR: straw yellow with greenish reflections. BOUQUET: fresh, rich, elegant, moderately persistent, with notes of white pulp fruits and hints of citrus. FLAVOUR: the taste reveals remarkable freshness and pleasant acidity; it is soft and balanced, with a pleasant citrus sensation in the finish. ACCOMPANY: This wine is recommended from aperitifs to the whole meal and is an excellent accompaniment to some typical Franciacorta dishes, from casoncelli (filled ravioli) to lake fish (perch and char). It enhances, without overpowering, the flavors of the dishes, whether they are rice and pasta dishes or white meats or fresh and medium-aged cheeses. SERVING TEMPERATURE: 6-8 °C.
