BERLUCCHI '61 ROSÉ Franciacorta GRAPE VARIETY: Pinot Noir (60%) and Chardonnay (40%), coming from the most suitable vineyards of the 19 communes of Franciacorta. HARVEST: from the second decade of August to the first of September. YIELD: 9.000 kg of grapes per hectare, with a yield in must of 55%, equivalent to 6.600 bottles per hectare. VINIFICATION: soft and progressive pressing of the grapes with fractionation of the must; alcoholic fermentation in steel vats. The maceration of Pinot Noir for a few hours in contact with the skins (maceration in pink) gives color and aromas typical of the variety. MATURATION: preparation of the cuvée in the spring following the harvest. Second fermentation in bottle and subsequent aging in contact with its own yeasts for at least 24 months, followed by another 2 months after disgorging. DOSAGE: Brut. FORMATS: 750 ml bottle, magnum 1.5 l, Jeroboam 3 l. ORGANOLEPTIC CHARACTERISTICS: VISUAL ASPECT: soft foam, with good persistence of a soft crown; fine and continuous perlage. COLOUR: intense pink, which may vary slightly with each vintage due to the different degree of phenolic maturation of Pinot Noir. BOUQUET: elegant notes of berries and ripe fruit, well blended with delicate scents of yeast and bread crust. Pleasant vinosity, due to the short maceration of Pinot Noir on the skins during vinification. FLAVOUR: fine, elegant, lively and full-bodied on the palate; the medium-high dosage of sugars balances the marked acidity. ACCOMPANYING: excellent as an aperitif, it can pleasantly accompany cold meats and savoury first courses and cheeses, even mature ones; it enhances its structure when paired with shellfish. SERVING TEMPERATURE: 6-8 °C. ANALYSIS: Alcohol 12,5% Vol. - Sugars 8,0 g/l Total Acidity 7,5 g/l - pH 3,10. FIRST YEAR OF PRODUCTION: 2009
